Just wanted to be clear that although the title of this blog site is "The Diet Divas," we do not intend for the word "diet" in this case to be used as a verb - something you do (e.g. I am dieting). "Diet" for our purposes is a noun - a thing (e.g. I am changing my diet).
We wanted to make sure that we are clear on this as particularly Weight Watchers (and really any diet program worth its salt) emphasizes that this is not a "diet" (verb), but rather a change of lifestyle.
Thai Chicken in your slow cooker
For the slow cooker:
2.5 lbs chicken pieces (I used drumsticks today)
1 c. hot salsa
1/4 c. peanut butter (only the natural stuff, baby!)
2 Tbsp. lime juice
1 Tbsp. low sodium soy sauce
1 tsp. fresh ginger, minced
For the garnish:
1/2 c. unsalted peanuts, chopped
2 Tbsp. fresh cilantro, chopped
1. Place chicken in slow cooker and set on LOW (4-6 hours depending on the size of your chicken and then to warm)
2. Mix all other ingredients except garnish in bowl.
3. Pour over chicken pieces.
4. Serve over rice and garnish with peanuts and cilantro.
